Bacon, Balsamic Onion & Baby Swiss Naan Pizza

All itmes were bought from Trader Joes(TJ)

2 pkg Frozen TJ Naan Bread
1 pkg TJ Balsamic Glazed Onions, cut into small pieces
1/2 lb Baby Swiss Cheese, shredded
1 pkg Fully Cooked Apple Smoked Turkey Bacon, diced into equal parts

Preheat the oven to 400F. Place the four naan breads on a baking sheet facing up. Distribute the onions equally over each naan. Then sprinkle the baby swiss Cheese over each piece evenly, followed by enough bacon to cover the onions and cheese. Bake in the oven for 15 minutes or until the cheese is golden and bubbly and the edges of the crust look crisp.

Make 8 large pizza slices.

When I get home from San Diego, I am going to try baking them on the pizza stone.

Finally in San Diego. Had to be patient. Weather issues in Cincinnati for the incoming plane. Flight was cancelled, they put us up in a hotel, gave us 1 free plane ticket and upgraded us to first class on Delta tomorrow going through Minneapolis.Good thing we left our car parked at the airport and took the shuttle over to the hotel, there is no parking available in any of the lots due to delays from incoming flights


My sister is in the airport today heading to ethiopia with her daughter and son in law to pick up the boys they adopted.

Rosemary Oatmeal Crackers

Had a carb craving today, while sitting in my chair and reading.

2 cups dry oatmeal
1/4 cup flour tortilla mix
2 tsp salt
1 tsp black pepper
2 tsp dried rosemary
3/4 tsp baking powder
1/2 stick cold butter, cut into small cubes
1/4 c, plus 2 Tbsp milk

Preheat oven to 375 degrees
grind oatmeal up in food processor
Add all dry ingredients and butter. Pulse until a coarse meal.
Add milk, pulse until a dough forms.
On a lightly floured flour sack dishcloth place the dough. If it is crumbly, take the ends of the cloth together and twist tight (like a bean bag). That will mold the dough tight.
Then roll out dough to 1/8 inch thick and cut out approximately 40 crackers. Use a small glass (the size of a shot glass) to cut the crackers out.
Arrange on a baking sheet sprayed with PAM. Bake for 12-15 minutes.
Cool and store in a airtight container.

P.S. They are good with hot pepper raspberry preserves!
