>> Friday, February 22, 2013

Here it is, 2013, hundreds of miles on the last shoes. Time for new shoes. Nobody prepared me for dayglo green. It is 1986 all over again.

Gifts of the New Year

the snow,

the quiet,

the sledding

 and a walk

Balsamic Onion Pizza

 Healthy Pizza Crust.
1 tsbp active dry yeast
1 cup warm water (110 - 115 degrees)
1 1/2 cup Flax meal
1 cup all purpose white flour
1/2 c ground cornmeal
1/2 tsp sea salt
1 tbsp honey or agave nectar
1 Tbsp Olive olie

Step 1
Combine honey and warm water, sprinkle yeast on top. Let stand 5 minutes to proof.
Step 2
In a separate bowl, combine the dry ingredients. Add oil to yeast mixture and pour in dry ingredients. Stir to combine ingredients and scoop onto a flat surface. Knead until elastic, adding more white flour as needed, about 5-8 minutes. Place in an oiled bowl, cover and let stand until doubled, about 20 minutes.
Step 3
Split dough into two rounds to make two 12-inch pizzas, or make one 16-inch pizza crust. Spread dough out onto greased pizza pans and cover with desired topping. Bake for 15-18 minutes at 400°F.

Balsamic Vinegar Caramelized Onions
1 yellow onions, julienned
1/4 cup baslamic vinegar
2 T brown sugar
Extra virgin olive oil

Heat a pan large enough to hold all of the onions with a bit of olive oil over medium heat. Add the onions and saute until they just begin to color, tossing frequently. Add the balsamic vinegar and brown sugar and stir or toss to combine. Cover, reduce the heat, and let cook for about 30-35 minutes, or until the onions have cooked down and caramelized deeply.
