Coronado Island and another Family Night

Today we drove over to Coronado Island to have brunch with Phillip, Sarah and the family. 
Brunch was English muffins (she made the night before), fried goat cheese with pecans and panko, cantaloupe, and poached eggs over lettuce, topped with balsamic.
It was sooooo yummy. Sarah is an amazing chef.
P.S. make sure never to mistake the lemon curd for hollandaise sauce. (Private joke).

For dessert, we sampled Sarah's birthday cake; an Arnie Palmer cake she made.
Quite unusual and so good.


We took off for a walk from their house over to visit the Hotel Del Coronado.

I couldn't resist window shopping as we walked.

The Hotel is a grand place.






Later in the evening, we cooked Chicken Foil Dinners over the coals.

Required:
aluminum foil
long fire tongs
Ingredients:
Serves One:
1 chicken breast
1 red potato 
1/4 onion
Seasoning salt
Notes:
Tear a foil wrapper for each person.
Instructions:
slice the potatoes and onions.
spray the center of the foil with Pam
.Start with a layer of potatoes
Next lay on top the chicken breast
Lay another layer of potato slices
Dot with butter
Sprinkle with season salt
Top with onion slices
Fold foil into a flat package sealed well, make sure to crimp the ends
Place the dinner on coals.
Cook for 20 minutes, then flip and cook 20 more.
Unwrap and check one dinner to see if they are done.
Make sure the chicken is white and firm, completely done, before eating.



Auntie Erin spoiled us with hot chocolate chip cookies later into the evening.


Justin thought that was his plate, we set him straight.

We stayed by the fire until we could no longer hold our eyes open. Tomorrow.........let's do it again.
